In a bowl, mix the cut veggies and 2 tablespoons of olive oil. Combine until the vegetables are covered in oil.
Line two baking sheets with parchment paper and spread the vegetables out across the two baking sheets. Make sure that the vegetables are not stacked one on top of each other. Sprinkle salt and pepper to taste.
Cook the vegetables for 12 to 15 minutes or until the vegetables are golden and crisp. Snack on these homemade chips with a little vegan dip!
