Vegan mini frittata with veggies

Did you know you can make a vegan frittata by skipping the eggs and using a chickpea flour base? Chickpea flour is an excellent source of protein, and is also packed with fiber. Known for its light and slightly sweet flavor, chickpea flour is often used for sweet and savory gluten-free recipes. For this frittata recipe, use whatever vegetables you have on hand, but definitely think about adding zucchini, as it gives it a great, soft texture!

How it's made


  • 1 3/4 cups of chickpea flour
  • 1 tablespoon of nutritional yeast
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of ground turmeric
  • 200g of silken tofu
  • 2 cups of the nut milk of your choice (or rice milk, soy milk, etc.)
  • 1 drizzle of olive oil
  • 1 cup of broccoli, cut into small pieces
  • 1 clove of garlic, minced
  • 3/4 cup of mushrooms, finely sliced
  • 10 cherry tomatoes
  • 1/3 cup of
  • A few sprigs of fresh herbs (parsley, basil, chives...)


  1. Preheat the oven to 400°F.
  2. In a large bowl, mix the chickpea flour with the nutritional yeast, salt and turmeric.
  3. Drain the silken tofu and add it to the bowl along with the nut milk. Mix with a whisk, or a wooden spoon if necessary. The mixture should be smooth, with every ingredient fully incorporated. If it's too thick, add a teaspoon of water at a time to thin it out.
  4. In a frying pan, heat up a drizzle of olive oil. Mince the garlic and finely chop the broccoli and mushrooms.
  5. Add the three to the frying pan and sauté for a few minutes until tender. Add the cherry tomatoes and walnuts to the pan, and cook for another 2 minutes.
  6. Add the fresh chopped herbs and mix well.
  7. Spoon 1 to 2 spoonfuls of the vegetables into the bottom of each section of a muffin tin. Cover with the chickpea flour-tofu mix.
  8. Bake for 30 to 35 minutes. Insert a sharp knife into the center of the one of the mini frittatas to check for doneness - it should come out clean.
  9. Let the frittatas cool completely before removing from the muffin tin.
