Vegan Almond Chocolate Brownies

How It's Made

Ingredients

  • 1/2 cup of
  • 1 1/2 cup of spelt flour
  • 3/4 cup of
  • 1 1/2 teaspoons of baking soda
  • 3 tablespoons of almond butter
  • 1/2 cup of apple sauce
  • 1 cup of coconut oil
  • 1/2 cup of cane sugar
  • 1/2 cup + 2 tablespoons of almond milk
  • 1/2 teaspoon of sea salt
  • 1 tablespoon of vanilla essence
  • 3/4 cup of
  • 1/2 cup of
  • A pinch of fleur de sel

Directions

  1. Remove the pits from the dates. If they're dry, put them in a bowl of boiled water for 10 minutes.
  2. Preheat the oven to 350°F. Line a 13" x 9" baking sheet with parchment paper.
  3. In a large bowl, sift the spelt flour, cocoa and baking soda, mix and set aside.
  4. Put the dates, almond butter, apple sauce, salt and vanilla extract in a food processor and mix until a creamy consistency.
  5. Using a spatula, mix in the liquids to the flour mixture. Add the chocolate chunks, keeping aside 2 tablespoons for garnish. Transfer the brownie batter evenly in the pan.
  6. Coarsly chop the almonds and sprinkle on top of the batter. Sprinkle the fleur de sel.
  7. Bake for 30 minutes, making sure to poke with a toothpick to ensure it is baked. Set aside and let cool completely. Keep fresh in the fridge.
