Ultimate vegan chocolate mini-cakes

A great recipe for vegan chocolate mini-cakes? No problem! Don't forget the applesauce - it makes them extra soft. Make your own homemade applesauce for an extra lovely touch - I made mine by mixing an apple and a bit of water in the food processor. This recipe also works to make ultra yummy chocolate muffins!

How it's made: mini-cakes


  • 1 cup of flour
  • 1/3 cup of cane sugar
  • 1/4 cup of
  • 1/2 teaspoon of baking powder
  • 1/4 cup of baking soda
  • 1/4 teaspoon of sea salt
  • 1/2 cup of applesauce
  • 1/4 cup + 2 tablespoons of nut milk
  • 2 tablespoons of melted coconut oil
  • 1/2 teaspoon of homemade vanilla extract


  1. Preheat the oven to 350°F. Grease the cake pan and set aside.
  2. In a medium bowl, mix the flour, sugar, cacao powder, baking powder, baking soda and salt.
  3. In a separate bowl, mix the applesauce, nut milk, oil and vanilla extract. Add the wet ingredients to the dry ingredients and mix well.
  4. Pour the batter into the cake pan and bake for 12 to 15 minutes. To see if they're done, insert a knife into the centre of one of the donuts - if it comes out clean, they're ready.
  5. Let cool completely on a rack. While the donuts are cooling, prepare the ganache.

How it's made: chocolate ganache



  1. Put the chocolate in a bowl. Heat the nut milk in a small saucepan just until boiling, then pour it onto the chocolate and mix with a spatula. Dip each donut into the ganache, and, if desired, sprinkle with chopped nuts, and let set for 5 minutes.
