Tofu à La Provençale

A mediterranea-inspired tofu recipe that goes well with a light salad. Taste the sunshine with each bite.

How It's Made


  • 1/2 block of firm tofu
  • 1/4 cup of green, black or kalamata olives
  • 2 tablespoons of Sultana raisins
  • 12 cherry tomatoes
  • 1/2 of an orange bell pepper
  • 2 garlic cloves
  • 3 tablespoons of olive oil
  • 1 large pinch of sea salt and fresh ground pepper
  • A handful of fresh parsley
  • 2 tablespoons of fresh basil


  1. Cut the tofu into large cubes.
  2. Slice the olives in half, and cut the ends of the cherry tomatoes. Dice the pepper and finely chop the garlic. Meanwhile, rehydrate the raisins for a couple minutes by placing in boiling water.
  3. Heat the olive oil in a pan and add the tofu. Fry for 5 minutes, stirring often. Generously apply salt and pepper. Add the tomatoes, pepper, and cook for 10 more minutes. Add more salt and pepper. Add the raisins and olives and cook for another 2 minutes.
  4. Adjust seasoning to taste and serve with fresh basil and chopped parsley.
