Pasta with Squash, Spinach and Walnut

The next time you're standing in the grocery aisle wondering "what can I make for supper?", here's your answer! This pasta with squash, spinach and walnuts is simple and delicious, and will please both parents and children alike. When preparing small amounts of squash, don't be afraid to take what you need and freeze whatever you don't use. In a properly sealed plastic bag, squash freezes beautifully, and this way you'll always have some on hand to make this amazing, crowd-pleasing dish!

How it's Made:


  • 200g of spaghetti
  • 2 tablespoons of olive oil
  • 2 cups of diced squash
  • Sea salt and ground pepper
  • 2 to 3 cloves of garlic, finely minced
  • 1 teaspoon of chili powder
  • Sea salt and fresh ground pepper, to taste
  • Zest and juice from half a lemon
  • 2 cups of fresh spinach
  • 1/2 cup of , coarsely chopped


  1. Preheat the oven to 400°F. In a large bowl, mix the squash, olive oil, salt and pepper. Mix well. Spread onto a baking sheet covered with parchment paper and bake for 20 minutes. 
  2. Cook the pasta according to package directions until "al dente". Drain and transfer to a bowl. Toss with a drizzle of olive oil and set aside. 
  3. In a large frying pan, heat up a tablespoon of olive oil and add the garlic, chili powder and walnuts. Brown over low heat for a few minutes, stirring frequently so nothing sticks. 
  4. Add the squash to the frying pan and stir gently. Add the spaghetti and spinach and mix. Season with salt and pepper, and drizzle with the lemon juice and zest. Serve immediately.
