You can never have enough cookie recipes. Lucky for you this one is pretty healthy and stacked with almonds and raisins!
How It's Made
1/2 cup of European almonds
2 cups of oatmeal
1 cup of spelt flour
1 cup of almond powder
1/2 teaspoon of baking powder
1 teaspoon of ground cardamom
1/2 cup of coconut oil
1 tablespoon of Cane Sugar
1/3 cup of maple syrup
1 tablespoon of vanilla essence
1/2 teaspoon of Salt
1/2 cup of Thompson Raisins
Melf the coconut oil in a bain marie.
Mix together the oatmeal, flour, almond powder, baking powder, cardamom, sugar and salt in a large bowl.
In a smaller bowl, mix together the coconut oil, maple syrup and vanilla.
Combine the two bowls and mix well. Set aside for 10 minutes.
Place the raisins in a small bowl of boiling water to rehydrate them. Remove, and wring to dry.
In a small pan, lightly grill the almonds, all the while stirring so they don't burn. Set aside to cool.
Preheat the oven to 350°F.
Mix in the raisins and almonds to the cookie dough. On a parchment paper lined baking sheet, form cookie-dough balls using about 1/4 cup amount of dough. Make sure to space evenly.
Bake for 15 minutes max. Let cool on a cooling rack, the cookies will harden as they cool.
