Soft and chewy chocolate-hemp squares with coconut
This recipe is quick and easy. Gluten-free and nutritious, these squares are packed with superfoods including chia seeds, hemp seeds, and raw cacao powder. They make a fantastic dessert or afternoon snack for both kids and adults!
In a large bowl, mix the dry ingredients (quinoa, puffed rice, cocoa, coconut, chia, hemp and sea salt).
In a saucepan over low heat, melt the coconut oil, and add the maple syrup and vanilla extract. Stir for a few seconds and remove from heat.
Add the wet ingredients to the dry ingredients and mix to combine with a spatula.
Lightly grease an 8" square pan with some coconut oil. Pour the mix into the greased pan and press it in to an even thickness. Cover with plastic wrap and refrigerate for 45 minutes to an hour.
Once chilled, cut into 9 squares.
Keep covered in the fridge.
