Roasted almond, sesame, goji berry and date bars

This no-bake bar is perfect for those mid-afternoon cravings. For a gourmet version, add some dark chocolate chunks - and for a more personalized version, add any other nut, seed, or dried fruit you want, Switch almonds for pecans, the cranberries for dried apricots of figs, or add some coconut strips! They can be kept for weeks in the freezer, or for a week or so in the fridge, ready to be pulled out and snacked on throughout the day!

How it's made



  1. Preheat the oven to 325F.
  2. Coarsely chop the almonds, leaving a few whole.
  3. Put the almonds, pumpkin seeds and sesame seeds on a baking sheet covered with parchment paper. Roast for about 12 minutes, until they're golden brown, stirring occasionally.
  4. While the nuts and seeds are roasting, put the dates into your food processor and pulse until they make a paste. Add the coconut oil, salt and 1 tablespoon of the almond butter and mix again.
  5. Let the almonds and seeds cool completely. Add to a large bowl with the Goji berries and dried cranberries.
  6. Line an 8" square baking dish with parchment paper.
  7. Add the nut mix to the date paste. Mix, add the dark chocolate chunks, and mix again.
  8. Pour the mixture into the prepared baking dish. Press the mix down with your hands so that the mix is about 2cm thick in the pan.
  9. Put the dish in the refrigerator for 2 hours, then cut into bars delicately.
