Oatmeal Cashew Chewy Bars

Soft, tender and sprinkled with cinnamon, this chewy creation will melt in your mouth like your mother's apple crumble.

How It's Made


  • 10 Medjool Dates
  • ½ cup rolled oats (not instant oats)
  • 1 cup cashews
  • 1 ½ tbsps ground cinnamon
  • 2 tbsps Organic Raw Virgin Coconut Oil
  • 1 heavy pinch sea salt
PRESERVATION Store the bars in a sealed container or Ziploc bag in the freezer for up to 2 months. Those bars are best eaten right of the freezer, they will be nice and chewy. At room temperature, they get soft and sticky.


  1. Process all ingredients in blender for about 1-2 minutes until the mixture is smooth and looks like cookie dough.
  2. Coat the bottom of an 8 x 8 inch baking pan or Pyrex with coconut oil. Place the oat mixture in the pan and spread evening with your hands. Pat the mixture down evenly and cover with a Saran Wrap type film.
  3. Put the baking sheet in the freezer for at least 4 hours. When relatively firm, remove from the freezer and cut into 2inch large bars.
