Maple Polenta Muffins

This is a great muffin base recipe that you can modify any way you like. Add fresh fruits like raspberries and blueberries or chocolate and nuts! For a gluten-free version, use buckweat flour or rice flour!

How It's Made


  • 1 1/2 cups of polenta
  • 1/2 cup of spelt flour
  • 1/2 teaspoon of sea salt
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 3/4 cup of apple sauce
  • 3 tablespoons of maple syrup
  • 1/2 cup of water or nut milk
  • 1 teaspoon of


  1. Preheat the oven to 350°F. Line a muffin sheet with muffin cups.
  2. In a large bowl, mix together the polenta, flour, salt, baking soda and baking powder.
  3. Mix together the apple sauce with the water, maple syrup and chia seeds.
  4. Add the liquid mixture to the dry mixture and mix until homogenous.
  5. Pour into the muffin cups until 3/4 full and bake for 15 minutes.
