Marinated grilled tofu triangles topped with an asian inspired ginger-orange sauce and the tangy sweet touch of goldenberries. A great summer recipe!
How It's Made: the marinated tofu
1 block firm tofu
1 tablespoon soy sauce
some sesame seeds
1/3 cup orange juice
2 tablespoons soy sauce
1 teaspoon grilled sesame oil
1 tablespoon fresh ginger
Mince the ginger and mix all the marinade ingredients in a large container.
Turn the block of tofu on its side and cut in 4 slices. Turn it over and slice in half, then cut the halves diagonally to form 16 triangles.
Place the triangles of tofu in the marinade and refrigerate for 30 minutes, or overnight.
How it's made: the sauce
2/3 cup orange juice
1/2 cup Goldenberries (Physalis)
1/4 cup apple sauce
1/4 cup maple syrup
1/2 tablespoon fresh ginger
Mix the orange juice and goldenberries in a small saucepan and bring to a boil over medium heat. Let it boil until the goldenberries are fully rehydrated (when they are soft and round again).
In a skillet over medium heat, fry the tofu triangles in oil.
Meanwhile, add the remaining sauce ingredients to the saucepan containing the orange juice and goldenberries and bring to a boil over medium heat.
Reduce heat and allow the sauce to caramelize for about ten minutes.
Place the tofu triangles (about three per person) on a bed of rice and/or steamed bok choy and pour the sauce over it. Garnish with sesame seeds.
