Add goji berries to your salty dishes and salads to bring a little sweetness, all the while benefiting from all the antioxidants!
How It's Made: The Salad
1/2 cup of whole-wheat couscous or bulgur
8 cherry tomatoes
2 Lebanese cucumber(s)
1/2 cup of red onion, diced
4 branches of fresh mint
1 cup of flat leaf parsley
2 tablespoons of Goji berries
Dice the tomato, cut the cherry tomatoes in half, slice the cucumbers in half lengthwise, finely chop the parsley.
Put the couscous in a salad bowl along with the goji berries. Add a 3/4 cup of boiling water, a tablespoon of olive oil and a pinch of sea salt. Cover and wait 10 minutes until the water is completely absorbed, the couscous is cooked and the goji berries are re-hydrated.
Fluff the couscous with a fork and let cool.
Mix the remaining ingredients together in a large salad bowl, then add the vinaigrette and toss.
How It's Made: The Vinaigrette
3 tablespoons of olive oil
5 tablespoons of lemon juice
1 large pinch of sea salt and fresh ground pepper
1 garlic clove
