Fresh Mediterranean tomato sauce

This raw tomato sauce is typically served with malawach, a traditional fried bread from Yemen made from thin layers of puff pastry (not the healthiest bread, but is it ever delicious!). This sauce is easy to make and surprisingly distinctive. Its acidity makes a tasty contrast to rich and creamy tahini sauce. Use it to add freshness and flavour to your table when serving Mediterranean dishes mezze-style!

How It's Made


  • 3 large tomatoes
  • 1 clove of garlic, minced
  • 4 tablespoons of olive oil
  • Sea salt and ground pepper


  1. Grate the tomatoes into a bowl. Add the other ingredients and mix. Season to taste and serve.
