Endive Salad with Walnut Butter Dressing

The richness of the PRANA walnut butter inspired me to turn it into a simple sauce. This endive salad is a perfect spring dish and will have you salivating with every bite!

How It's Made


  • 130 gr arugula salad
  • 1 head of endive
  • 1/4 cup cranberries sweetened with apple juice
  • 2 Lebanese cucumbers
  • 2 teaspoons capers
  • 5 chive stems
  • 1 red apple
  • 1/2 cup walnut butter
  • 3/4 cups freshly squeezed orange juice
  • 1/2 teaspoon sea salt


  1. Mix all dressing ingredients in a blender (last 3 ingredients in the list) until it becomes a smooth and creamy texture.
  2. Slice the endives on the bias.
  3. Cut the apples into thin slices using a mandoline.
  4. Slice cucumber in half moon shapes and chop the chives.
  5. Serve and eat!
*Add cooked red quinoa to the salad for bigger appetites!
