Dhal With Coral Lentils and Coconut Milk

Try this easy-breezy dhal recipe when looking for a cheap and quick dish to prepare. Combine it with brown rice and naan bread for the ultimate comfort meal!

How It's Made


  • 2 tablespoons of virgin coconut oil
  • 1 large onion
  • 2 garlic cloves
  • 3 leeks
  • 1 cup of coral lentils
  • 2 cups of water
  • 2 cups of coconut milk
  • 3 kaffir leaves
  • 2 teaspoons of ground cumin
  • 1 1/2 tablespoons of ground turmeric
  • 6 pinches of sea salt
  • 10 cherry tomatoes
  • 3 branches of fresh cilantro
  • Juice of 1/2 lemon


  1. Chop the onion and garlic. Slice the leeks in medallions.
  2. In a pot, cook the onion, garlic and leeks in coconut oil until the onion becomes golden. Add the lentils, cumin, turmeric, pepper and kaffir leaves. Cook while stirring for 2 minutes.
  3. Add in the water and coconut milk and cover the pot. Bring to a boil then reduce heat and let simmer for about 20 minutes or until the lentils are tender. Remove from heat.
  4. Cut the cherry tomatoes in half and add to the lentils. Add salt to taste.
  5. Serve in a bowl (with or without brown rice) and garnish with fresh cilantro and a squeeze of fresh lemon juice.
