It only takes a few ingredients to make these healthy snacks. Slip them into your lunchbox for your afternoon fix!
How It's Made: Crunchy Outer Crust
1 1/2 cup of European almonds
1 1/2 cup of oatmeal
1/2 teaspoon of sea salt
5 Deglett Dates
5 pitted prunes
1/4 cup of coconut oil
In a food processor, mix together the almonds, rolled oats and salt until a fine crumble.
Remove the pits from the dates and prunes and cut into small pieces. Add them to the food processor and mix again for a few seconds.
Melt the coconut oil in a bain marie and add to the food processor. Mix well.
Put aside 3/4 of the mixture. Press the remaining 1/4 on an 8" x 8" baking sheet lined with parchment paper.
How It's Made: Prune & Date Filling
10 Deglett Dates
10 pitted prunes
1/2 cup of water
1 tablespoon of vanilla essence
Remove the pits from the prunes and dates and put them in the food processor along with the water and vanilla essence. Mix until a smooth uniform paste. Add water if necessary.
Using a spatula, spread the mixture evenly on top of the crust baking sheet.
Add on top the remaining crust and refrigerate for for an hour (or overnight if you wish the bars to remain raw). Cook in the oven for 20 minutes at 350°F.
Cut the mixture into squares and preserve in a air tight container in the fridge or freezer.
