Coral Lentil Curry with Sweet Potato and Quinoa

Curry and dhal make great comfort foods that are practical and easy to make. You can easily incorporate any leftover veggies and in your dish and you'll still get a hearty warming meal. In order to always have the basics for this kind of recipe, we recommend you keep on hand some sweet potatoes, carrots, squash, broccoli and leeks - all vegetables with longer shelf life. If you have these basic ingredients along with our suggested pantry essentials (quinoa, lentils, coconut milk, mixed nuts), making a curry is as easy as 1-2-3! How It's Made

Ingredients

  • 2 tablespoons of melted coconut oil
  • 2 sweet potatoes, peeled and diced
  • 1 carrot, peeled and diced
  • 1 chopped onion
  • 2 cloves of garlic, grated
  • 1 teaspoon of ground turmeric
  • 2 teaspoons of ground cumin
  • 1/3 cup of coral lentils
  • 1/2 cup of
  • 2 cups of coconut milk
  • 2 cups of water or vegetable broth
  • 1 kefir leaf
  • 2 cups of spinach, well packed
  • Juice of 1/2 lemon
  • 1/4 cup of cilantro
  • 1/4 cup of chopped or
  • Naan bread, for serving

Directions

  1. Heat the coconut oil in a large pot. Add the diced sweet potatoes and carrots, cook 3-4 minutes on medium-high heat. Add garlic, onion, kefir leaf and spices. Mix well and cook for an additional 3 minutes.
  2. Add the lentils and quinoa, mix well and add the broth and coconut milk. Bring to a boil, reduce heat and simmer for 20-25 minutes until the lentils are cooked and the quinoa is tender. Stir occasionally gently with a wooden spoon.
  3. Remove from heat and add the fresh spinach. Serve in soup plates, add chopped cilantro, lemon juice and chopped almonds. Enjoy with warm naan bread.

This is an easy, tasty and healthy meal that is well balanced with flavour and colour. My body felt good after eating it and I really enjoyed the texture that the almonds brought in and the freshness that the spinach and cilantro contributed. I would recommend it to those who desire a light but fulfilling meal.

The only itty bitty downside was my hubby thought it looked a little too mushy to spur his appetite, but he's a pizza kinda guy. The lack of detail in the photo and in the description as to the intended size of the veggies, may have created a slightly different recipe than intended.

Changes I made: Carton of drinking coconut milk as opposed to canned coconut milk; I did not have kaffir leaves
