A melt-in-your-mouth vegan fudge that is as healthy as it is delicious.
How It's Made
12 Medjool dates
1/2 cup coconut oil
6 tablespoons cacao powder
4 tablespoons maca powder
1/2 cup of shredded coconut
2 large pinches of sea salt
1 tablespoon vanilla essence
Melt the coconut oil in a double-boiler.
In a food processor, mix the melted coconut oil with the cacao powder, dates (if your dates are tough we recommend you soften them by soaking them in water), maca powder, vanilla extract, shredded coconut and salt.
Cover in plastic wrap a 6" x 6" pie mold (or any similar size at your disposal). Pour the fudge mixture into the mold. Press down on the fudge to get a smooth even surface.
Refrigerate until it becomes solid, about an hour.
Cut the fudge into small cubes and store in an airtight container.
