Chocolate-covered coconut bars

These bars are a dream come true for the coconut lover in your life. Completely homemade, completely vegan, and completely easy, they're a mix of 70% raw cacao chocolate chunks and creamy coconut filling. With just 6 ingredients, they're much less sugary-sweet than commercial varieties, and they're extremely easy to prepare. Our shredded coconut is slowly sun-dried in order to preserve its delicate flavor, making it ideal for adding an exotic touch to recipes.   1. In a saucepan, heat the maple syrup for a few minutes until it's thickened and lightly caramelized.
  2. Add the coconut milk, the shredded coconut, the salt and the vanilla extract. Cook for 2 minutes, stirring constantly and remove from heat. The mix should be creamy and the liquid should be completely evaporated.
  3. Pour the mix into a bowl and let cool for 20 minutes in the fridge.
  4. Once cool. shape into small bars of about 2 inches, pressing each in your palms and placing on a baking sheet covered with parchment paper. Chill for about an hour.
  5. Melt the chocolate chunks in a bain marie or double boiler. Use a fork to pick up each coconut bar and dip them into the dark chocolate to coat.
  6. Once coated, put the bars back on the baking sheet and let the chocolate harden for several minutes.
  7. The bars will keep in a sealed container in the fridge for several days.
