Chocolate Chip Energy Bars

These easy to make bars are vegan, gluten free and paleo friendly! Make them for your lunches instead of pre-made granola bars.

How It's Made


  • 1 cup Medjool Dates
  • 1 ½ cup cashews
  • ½ tsp sea salt
  • 3 tbsps Chocolate Chunks 70% Cacao
  • 1 tsp vanilla essence
SUBSTITUTE Substitute half the dates for our dried figs and indulge in new tastes. PRESERVATION Preserve in the refrigerator in an airtight container.


  1. Place the raw cashews in a food processor and pulse until cashew pieces are a little smaller than peas and not completely smooth
  2. Add the dates and pulse until combined and the mixture easily sticks together when squeezed between your fingers. Add the salt and vanilla until combined.
  3. Add the chocolate and pulse until just mixed
  4. Remove the mixture from the food processor and place in an 8 x 8" baking pan, lined with parchment paper. Smooth out the mixture by hand until its level. The more you pack it down, the better they'll hold together!
  5. Place the baking pan into the freezer and freeze for at least 15 minutes. Remove from freezer and cut into 10 or 12 pieces. Enjoy!
