A quick and easy recipe that’s gluten free and super nutritious! A combination of superfoods, such as chia, hemp and cacao powder make these squares extra special! Perfect for desserts or afternoon snack for your children.
How It's Made
1 cup of puffed quinoa
2 cups of crunchy puffed rice
1/3 cup of raw cacao powder
1/3 cup of shredded coconut
2 tablespoons of chia seeds
2 tablespoons of hemp seeds
1 pinch of sea salt
3/4 cup of virgin coconut oil
4 tablespoons of maple syrup
1 teaspoon of vanilla extract
In a large bowl, mix the dry ingredients (quinoa, puffed rice, cocoa, coconut, chia, hemp and sea salt).
In a saucepan over low heat, melt the coconut oil, and add the maple syrup and vanilla extract. Stir for a few seconds and remove from heat.
Add the wet ingredients to the dry ingredients and mix to combine with a spatula.
Lightly grease an 8" square pan with some coconut oil. Pour the mix into the greased pan and press it in to an even thickness.
Cover with plastic wrap and refrigerate for 45 minutes to an hour.
Once chilled, cut into 9 squares. Keep covered in the fridge.
