Soak cashews in distilled water for up to 30 minutes.
Rinse and drain the cashews.
Blend all of the ingredients in the blender until you obtain a smooth consistency.
Use as a dip, vinaigrette or sauce with vegetables or fruits. You could even use this tzatziki as a spread in your sandwich. Enjoy!
