Cashew Mint Vegan Tzatziki

How It's Made

Ingredients

  • 1 cup
  • 4 tsps lemon juice
  • ½ tsp sea salt
  • ¼ cup water
  • ½ bunch fresh mint
  • ½ tsp agave syrup
  • 1 small garlic clove(s)

Directions

  1. Soak cashews in distilled water for up to 30 minutes.
  2. Rinse and drain the cashews.
  3. Blend all of the ingredients in the blender until you obtain a smooth consistency.
  4. Use as a dip, vinaigrette or sauce with vegetables or fruits. You could even use this tzatziki as a spread in your sandwich. Enjoy!
