Zucchini latkes with herbs & spices

Another excellent lunch idea to break up the monotony of sandwiches and salads - homemade zucchini latkes with spices and fresh herbs! No need for eggs in this recipe - it's completely vegan! A gel made with ground flaxseed or chia seeds is a great substitute. All you need to do is mix the ground seeds with a bit of water and let it sit to make some magic. Try these served with a cool and fresh avocado sauce or a creamy, spicy cashew sauce.

How it's made

Ingredients

  • 1 tablespoon of ground or
  • 3 tablespoons of water
  • 3 medium zucchini, grated (about 2 cups packed)
  • 1/2 onion, finely minced
  • 2 to 3 tablespoons of fresh herbs, minced (parsley, basil, dill, cilantro...)
  • 1 tablespoon of olive oil
  • 2 teaspoons of cumin
  • 1/2 teaspoon of
  • Ground pepper
  • 1/2 cup of the flour of your choice

Directions

  1. Prepare a flax (or chia) gel by mixing a tablespoon of ground flaxseed with 3 tablespoons of water. Let sit until it becomes a thick gel.
  2. Grate the zucchini and drain excess water either by squeezing them in a clean tea towel, or with your hands over a bowl/the sink.
  3. Put all the ingredients together in a mixing bowl and combine.
  4. Heat the olive oil in a non-stick frying pan. Make small balls of the zucchini mix and flatten them with your palms. Drop them into the hot oil and fry for 5 minutes on each side. Remove from the pan and drain the excess oil on a plate lined with paper towels.
