Warm asparagus and green bean salad with smoked almonds

Try this delicious green salad, full of the summery flavor of asparagus and green beans, complemented perfectly by crunchy, smoky almonds. It doesn't take long to prepare, so it's perfect when you're short on time. The smoked almonds are absolutely addictive so consider preparing a double batch to keep on hand as a snack or pre-dinner treat!

How It's Made:

Ingredients

  • 15 stalks of asparagus
  • 1 cup of thin, bright green beans
  • 2 tablespoons of extra virgin olive oil
  • 1 French shallot
  • 2 cloves of garlic
  • Zest of one lemon
  • Sea salt and ground pepper
  • ¼ cup of smoked

Directions

  1. Lightly steam the asparagus and green beans for a few minutes, but make sure they retain their crunch. Remove from heat and cut the asparagus in 3 and the green beans in 2 crosswise. Finely chop the shallot. 
  2. Prepare the smoked almonds as per the instructions below. 
  3. In a frying pan, heat the olive oil and add the shallot, minced garlic, asparagus and green beans. Saute for 2 minutes and season with salt and pepper. 
  4. Add the lemon zest and the smoked almonds and toss. Serve immediately.

How It's Made: Smoked Almonds

  1. Preheat the oven to 300°F. Mix the ingredients together in a bowl, add the almonds, and toss until they're thoroughly coated. 
  2. Evenly spread the almonds onto a baking sheet covered with parchment paper. Bake for 15 minutes, stirring regularly. 
  3. Let cool completely before adding to the salad.
