A decadent vegan cookie to eat while hot! Make sure to double up this recipe as you'll be coming back for more.
How It's Made
1 cup of spelt flour
1/2 cup of cane sugar
1/2 cup of cacao powder
1/2 teaspoon of baking powder
1/4 teaspoon of baking soda
A large pinch of fleur de sel
8 tablespoons of almond milk
4 tablespoons of coconut oil
1 cup of 70% cacao chocolate chunks
Preheat the oven to 300°F.
In a blender, mix together the flour, sugar, cacao, baking soda, baking powder and fleur de sel. Blend for only a couple seconds.
Melt the coconut oil in a bain marie.
Add the almond milk and coconut oil to the blender and mix until the ingredients form a dough. Add the chocolate chunks.
Form cookies the size of ping pong balls and place on a parchment paper lined baking sheet. Gently flatten the balls and bake for 15 minutes.
Remove from oven and place on a cooling rack. They will seem very soft, however they continue to cook as they are cooling.
