Vegan Coconut Caramel with Pecans

This delicious caramel recipe is 100% vegan. Drizzle it on your favourites like crapes, pancakes, yogurt, ice cream, or even dip your apple slices in it! Another interesting way to use it is by adding a teaspoon to your coffee or latte for a little caramel hint. It might not be the healthiest recipe in the world, but it does feel good to indulge in cruelty-free caramel from time to time, doesn't it?

How It's Made


  • 1 cup of coconut milk
  • 1/2 cup of coconut sugar or cane sugar
  • 1/2 cup of maple syrup
  • 1 tablespoon of coconut oil
  • 1/2 teaspoon of vanilla essence
  • 1/3 cup of pecans
  • 1 pinch of himalayan sea salt


  1. In a large saucepan, combine all ingredients except pecans and salt.
  2. Bring to a boil and simmer over medium heat until the caramel has thickened.
  3. Remove from head and add finely chopped pecans and a pinch of salt. Mix.
  4. Pour the caramel into small glass containers. The caramel will keep for one week in the refrigerator. To soften a bit before use, heat in a double-boiler or microwave for a few seconds.
