The ultimate oat and chocolate chip cookie. Bet you can eat just one!
Yields 15 to 24 cookies
How It's Made
⅓ cup Smooth Almond Butter
2 tbsps Organic Raw Virgin Coconut Oil
2 cup Cane Sugar
⅓ cup homemade almond milk
1 tsp vanilla essence
1 cup organic spelt flour
½ tsp baking soda
½ tsp sea salt
1 cup rolled oats (not instant oats)
½ cup Chocolate Chunks 70% Cacao
½ cup pecans
Preheat oven to 425°F. Put a parchment paper on a large baking sheet and set aside.
In a big bowl, whisk together the almond butter, the melted coconut oil, the sugar the almond milk and the vanilla extract until smooth.
In another bowl, mix the flour, oats, baking soda and salt. Add the dry ingredients into the wet ingredients and stir to combine. Mix in the vegan chocolate chips and nuts.
Drop batter by large spoonfuls onto prepared baking sheet. Bake for about 8 minutes, or until the top just begins to crack. Remove sheet from oven, and wait 10 minutes before transferring cookies to a plate or wire rack. Enjoy with a glass of homemade almond milk!
