Dice the apples and chop the cranberries and dates. In a large bowl mix the fruits with the spelt flour, cinnamon, and 1 tablespoon of brown sugar.
How It's Made: Coconut Crumble Crust
1/2 teaspoon sea salt
1/2 cup of coconut oil
1/2 cup of of Brazil Nuts
1 cup of oatmeal
1 cup of Shredded Coconut
1/4 cup of brown sugar
Preheat the oven to 350°F.
In a food processor mix together the oatmeal, shredded coconut, salt and sugar, mix well.
In a bain marie, melt the coconut oil, then add it to the food processor. Continue mixing until the texture becomes grainy. Add the brazil nuts and mix a little longer.
How It's Made: Fill the Ramekins
6 small ramekins
2 tablespoons melted coconut oil
Grease 6 small ramekins with two tablespoons of melted coconut oil.
Evenly distribute the coconut crust across the bottom of each ramekin about 1 cm thick then add the fruit mixture. Cover generously with the remaining coconut crust.
Bake for 30 minutes until the top is nice and golden and the apples are soft.
