Umami Vinaigrette

This dressing is an explosion of five basic flavors with sweet, sour, bitter, salty and umami!

How It's Made


  • 1/2 cup Goldenberries (Physalis)
  • 3/4 water
  • 2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • salt and pepper to taste


  1. Puree the first three ingredients in a blender.
  2. Once pureed, add the olive oil.
  3. Salt and pepper to taste.
  4. Serve with mixed greens and some raisins with finely sliced dried goldenberries.
This vinaigrette is delicious with a walnut and endive salad, or paired with an avocado half.
