Slice the olives in half, and cut the ends of the cherry tomatoes. Dice the pepper and finely chop the garlic. Meanwhile, rehydrate the raisins for a couple minutes by placing in boiling water.
Heat the olive oil in a pan and add the tofu. Fry for 5 minutes, stirring often. Generously apply salt and pepper. Add the tomatoes, pepper, and cook for 10 more minutes. Add more salt and pepper. Add the raisins and olives and cook for another 2 minutes.
Adjust seasoning to taste and serve with fresh basil and chopped parsley.
