Thai Green Papaya Salad

Also known as "som tam", green papaya salad is a beautifully unique and flavor-filled Thai dish that will make a great impression. This fresh spicy salad is easy to make, very nutritious, just perfect for hot summer days.

How It's Made

Ingredients

  • 1/3 cup roasted and chopped, half and half Brazil nuts and hazelnuts
  • 1/3 of a small Thai chili
  • 500g green papaya, peeled
  • 3 ½ tbsps coconut palm sugar
  • 2 tbsps wheat-free tamari sauce
  • juice of one lemon
  • 3-4 french shallots thinly sliced
  • 5 cherry tomatoes cut in half
  • 1 garlic clove(s), minced
  • 8 green beans cut to 1" pieces
  • sea salt and pepper to taste

Directions

  1. Peel the green papaya and cut to make noodles ribbon-like stripes. There are 3 options to do so: 1) Use a grater 2) Use a special Thai peeler that you can buy in a Thai store, it’s the easiest way and makes the nicest stripes 3) Use a knife using the Thai way of shredding the papaya. Make many long cuts into the flesh of the peeled papaya with a sharp knife to make longitudinal cuts (don’t cut deep), then thinly slice off the top layer into a bowl. Continue until the amount of papaya needed is shredded. Any remaining pieces can be chopped up into strips with your knife. Discard the seeds.
  2. Crash the nuts in a mortar. If you don’t have a mortar, use a deep bowl and crash them with a strong glass bottle. Set aside.
  3. Put the garlic and chili in the mortar and crash. Add the sliced shallots, tomatoes, green beans, papaya, nuts, lemon juice, coconut sugar, soy sauce and salt. Continue to mash all of it with the pestle or the glass bottle to bring out the juice and tenderize the green papaya.
  4. Taste the salad. Thai cooking should be intuitive. If it is not sweet enough, add a little more coconut sugar. If not flavorful enough, add a little more soy sauce. If too sweet or salty, add more lemon juice. Add more chili for a spicier salad.
  5. Serve immediately in a nice dish with clover or alfalfa sprouts on the side. Enjoy!
