Tempeh Kabobs with Chimichurri Sauce

An original way to use tempeh that will satisfy even the hungriest carnivores. Filled with highly digestible vegetable protein, tempeh is a great alternative to meat. In this recipe, the tempeh is complimented by the freshness of the Chimichurri sauce.

How It's Made: Main Course

Ingredients

  • A 340g block of tempeh
  • 1/2 cup of extra-virgin olive oil
  • 4 tablespoons of wheat-free soy sauce
  • 2 tablespoons maple syrup
  • 2 teaspoons rice vinegar
  • 2 garlic cloves
  • 2 tablespoons of dijon mustard

Directions

  1. Preheat the oven to 350°F.
  2. Cut the tempeh into about 1 inch cubes. A 340 gr block of tempeh will give you about 30 pieces.
  3. Peel and grate the garlic. Mix together all the marinade ingredients in a bowl.
  4. Add the tempeh to the marinade and let soak for 30 minutes to an hour.

How It's Made: Chimichurri Sauce

Ingredients

  • 3 tablespoons of lemon juice
  • 6 tablespoons of water
  • 1/2 tablespoon of dried oregano
  • 1/2 bunch of fresh cilantro
  • 1 small garlic clove
  • 1/2 teaspoon of sea salt
  • Fresh ground pepper

Directions

    While the tempeh is cooking, prepare the chimichurri sauce by chopping the cilantro and grating the garlic. Mix all the ingredients in a small bowl. *It is important that the Chimichurri sauce is made fresh.

How It's Made: Vegetables for Skewers

Ingredients

  • 1 red onion
  • 2 zucchinis
  • 5 Mushrooms
  • 1 red bell pepper

Directions

  1. Chop red onions into large pieces, zucchini into slices, mushrooms in two and red pepper into large cubes.
  2. Build the skewers by alternating the marinated tempeh cubes and chopped vegetables.
  3. Place the skewers on a baking sheet lined with parchment paper and bake for 15 minutes. After 15 minutes, remove the skewers from the oven, turn them, and using a brush, coat them with the remaining marinade. Bake for another 15 minutes. Turn skewers again and cook an additional 15 minutes for a total of 45 minutes baking.
  4. While the skewers are cooking, prepare the Chimichurri sauce.
