Sweet Potato Latkes with Cashew Lime Sauce

Easy and savoury, these sweet potato latkes are the perfect accompaniment to a salad, or alone as a snack. With the complimentary cashew-lime sauce, you get a real explosion of complimentary flavours. This recipe was inspired by Yotham Ottolenghi's Plenty cookbook.

How It's Made: Latkes

Ingredients

  • 4 sweet potatoes
  • 2 teaspoons of soy sauce
  • 3/4 cups of spelt flour
  • 1 teaspoon of salt
  • 3 green onions, chopped
  • 1 teaspoon of ground chia
  • 1/2 teaspoon of chili powder
  • Some vegetable oil for cooking

Directions

  1. Preheat the oven to 400°F. Place the potatoes on a baking sheet and bake for 35 minutes. In the meantime, prepare the cashew-lime sauce.
  2. Once cooked, scoop out the flesh and mix together in a large bowl with the remaining ingredients.
  3. Form small latkes and refrigerate for 15 minutes
  4. In a non-stick pan, heat a large splash of vegetable oil and cook the latkes for 3-4 minutes on each side, until nice and golden. Then, place the latkes in the oven for 15 minutes at 350°F.

How It's Made: Creamy Cashew-Lime Sauce

Ingredients

  • 1 cup of cashews, soaked (preferably)
  • 1/2 cup of water
  • 2 tablespoons of lime juice
  • 1 teaspoon of sea salt
  • Pepper to taste

Directions

  1. Blend all ingredients together until smooth and creamy. Adjust seasoning to taste.
