Soft Oatmeal, Raisin and Almond Cookies

You can never have enough cookie recipes. Lucky for you this one is pretty healthy and stacked with almonds and raisins!

How It's Made

Ingredients

  • 1/2 cup of European almonds
  • 2 cups of oatmeal
  • 1 cup of spelt flour
  • 1 cup of almond powder
  • 1/2 teaspoon of baking powder
  • 1 teaspoon of ground cardamom
  • 1/2 cup of coconut oil
  • 1 tablespoon of Cane Sugar
  • 1/3 cup of maple syrup
  • 1 tablespoon of vanilla essence
  • 1/2 teaspoon of Salt
  • 1/2 cup of Thompson Raisins

Directions

  1. Melf the coconut oil in a bain marie.
  2. Mix together the oatmeal, flour, almond powder, baking powder, cardamom, sugar and salt in a large bowl.
  3. In a smaller bowl, mix together the coconut oil, maple syrup and vanilla.
  4. Combine the two bowls and mix well. Set aside for 10 minutes.
  5. Place the raisins in a small bowl of boiling water to rehydrate them. Remove, and wring to dry.
  6. In a small pan, lightly grill the almonds, all the while stirring so they don't burn. Set aside to cool.
  7. Preheat the oven to 350°F.
  8. Mix in the raisins and almonds to the cookie dough. On a parchment paper lined baking sheet, form cookie-dough balls using about 1/4 cup amount of dough. Make sure to space evenly.
  9. Bake for 15 minutes max. Let cool on a cooling rack, the cookies will harden as they cool.
