Not far off from a Greek salad in taste, this soaked almond salad has all the nutrients you'd find in a glass of fresh almond milk! Satisfying and nutritious, this salad will surely become a staple in your diet.
How It's Made
1 cup European almonds
1/2 red bell pepper, diced
2/3 cups Pitted Kalamata olives
1 Lebanese cucumber(s)
1 french shallots thinly sliced
sea salt and pepper to taste
Soak the European almonds for 12 hours, then rinse and strain.
Julienne the red pepper, and then cut in 4. Cut the cucumber lengthwise then slice into half moons. Slice the french shallots in rings.
Roughly chop the almonds.
Mix all ingredients.
Coat with olive oil and lemon juice to taste (about a tablespoon of each).
Add salt and pepper to taste.
Mix and serve!
