How It's Made

Ingredients

  • 1/2 cup of cashews
  • 1/2 cup of water
  • One clove of garlic
  • A pinch of sea salt and pepper
  • 3 sprigs of chive
  • 6 golden or russet potatoes
  • 1/4 cup of pine nuts
  • 1/4 cup of almonds
  • 1/4 cup of sunflower seeds
  • 1 tablespoon of vegetable oil
  • 1 teaspoon of smoked paprika
  • A pinch of sea salt and pepper
  • 1/4 cup of pesto

Directions

  1. Soak the cashews overnight or for at least 4 hours. Once soaked, rinse and drain.
  2. In a blender, mix the cashews with 1/4 cup of water and blend until smooth and creamy. Add salt, pepper, a grated clove of garlic and the chives.
  3. Preheat the oven to 400°F. Bake the potatoes either in the oven, wrapped in aluminum foil for 30 minutes, or by boiling them until tender. We recommend baking them for a richer taste.
  4. In a blender, or bowl with a fork, mash the potatoes while adding the cashew cream. Adjust seasoning by adding salt and pepper. You can also adjust the consistency to your liking by adding more cashew cream.
  5. Toss the nuts in some olive oil and roast them in a small casserole. Add the smoked paprika, salt and pepper.
  6. Serve the mash topped with pesto and garnished with grilled nuts.
