Cashew Mint Vegan Tzatziki

Ingredients

  • 1 cup PRANA organic non-roasted cashews
  • 4 tsp lemon juice
  • ½ tsp sea salt
  • ¼ cup water
  • ½ bunch fresh mint
  • ½ tsp agave or maple syrup
  • 1 clove garlic

Preparation

  1. Soak cashews in water for up to 30 minutes. Drain (discarding the soaking water) and rinse.
  2. Mix all the ingredients in a blender until smooth.
  3. Use as a dip, a dressing, a sauce for grilled vegetables or as a spread in your sandwich.
