Quinoa, Beet and Orange Salad

Can eating more colourfully boost our spirits? This quinoa, beet, and orange salad might be up to the challenge. There's nothing quite like a healthy and hearty salad brimming with vegetables, nuts, and crunchy grains, all dressed with a delicious vinaigrette. The mix of multicoloured vegetables and fruits in this salad are an easy, tasty, and nutritious way to make your plate look great. And it doesn't need to be time-consuming to prepare! Just cook the quinoa and the beets in advance, and then mix with the rest of the ingredients before serving.

How It's Made: Beet salad

Ingredients

  • 2 cooked beets
  • 1 large carrot
  • 1/2 cup of frozen edamame
  • 1/2 cup of quinoa
  • 1 tablespoon of olive oil
  • Sea salt and ground pepper
  • 1/3 cup of pecans
  • 1/4 cup of pumpkin seeds
  • 2 cups of fresh spinach or baby kale
  • 1 orange

Directions

  1. Pour one cup of water over the quinoa in a saucepan. Bring to a boil, then set to low, cover, and simmer for 10 minutes. After 10 minutes, turn off the burner and leave covered to steam for 10 minutes. Fluff with a fork and set aside. 
  2. Pour boiling water over the edamame and let sit for about five minutes. Drain and set aside. 
  3. Heat a small frying pan and add the pecans and pumpkin seeds. Cook them for about five minutes, until they're golden, but not burnt. Set aside. 
  4. Grate the carrot and cut the beet into small cubes. Peel and supreme the orange (this is when you remove all of the peel and membrane from the orange segments). Combine all the ingredients except for the orange and the spinach. 
  5. Once the vinaigrette is ready, mix the spinach and oranges with the quinoa mixture, then add the vinaigrette.

How It's Made: Maple dijon vinaigrette

Ingredients

  • 1/4 cup of olive oil
  • 1 tablespoon of apple cider vinegar
  • 1 tablespoon of dijon mustard
  • 1/2 tablespoon of maple syrup
  • 1 small clove of garlic, minced
  • Sea salt and ground pepper

Directions

  1. Prepare the vinaigrette by combining all of the ingredients in a mason jar, closing it tightly, and shaking. Season to taste.
