How It's Made

Ingredients

  • 1 cup European almonds
  • 1 cup European Pumpkin Seeds
  • 1/4 cup chia seeds
  • 1 1/2 cup Deglett Dates
  • 1/2 cup Sultana Raisins
  • 2 tablespoons cacao powder
  • A big pinch of sea salt

Directions

  1. Soak pitted dates in water to rehydrate them slightly.
  2. In a dry pan, lightly toast the raw almonds until fragrant, set aside to cool. Do the same with the pumpkin seeds.
  3. Drain the dates and add them to a food processor. Mix into a chunky paste and set aside in a bowl.
  4. Add the toasted almonds, pumpkin seeds, chia seeds, cacao, and salt to your food processor and pulse into a textured crumb.
  5. Add the date paste back into the food processor with the nut & seed mixture and pulse until combined.
  6. Add the sultana raisins to the food processor and pulse to mix into a ʻdoughʼ.
  7. Press the protein bar mixture evenly into a 13"" x 9"" plastic-lined baking tin, using your hands to get the mix compacted down into each corner.
  8. Freeze for 2-3 hours before cutting into bars, and store bars in the freezer.
