How It's Made

Ingredients

  • 1 zucchini(s)
  • 1 cup fresh parsley
  • fresh chives
  • ½ garlic clove(s), minced
  • ground turmeric
  • 1 pinch sea salt
  • pepper to taste
  • 1 cup Pineapple Rings
  • ½ garlic flower(s)
  • ½ tsp ground turmeric
  • 1 tsp shiro miso paste
  • 1 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 tsp cider vinegar

Directions

  1. Spiralize your zucchini with your spirolizer or mandolin so that they resemble spaghetti.
  2. Mince parsley, chives and garlic and put aside.
  3. Grind spices with your mortar & pestle. Add to the spaghetti strips and massage with your hands to flavour the vegetables.
  4. In a bowl, dilute miso with the apple cider vinegar and the turmeric.
  5. Add the maple syrup and olive oil and mix until all the ingredients are combined. Put aside.
  6. Slice the pineapple rings in thin pieces, mince chives & garlic flower and add to the sauce. Mix all the ingredients together and pour over the salad. Sprinkle sunflower seeds for that extra crunch! Enjoy!
