Pecan Hazelnut Cookies

There is no better way to embrace the beginning of winter then by settling down with a warm beverage and a batch of delicious Pecan-Hazelnut cookies. Treat yourself!

How It's Made


  • 1 cup Cane Sugar
  • 2 tbsps baking powder
  • 1/2 tsp vanilla essence
  • 2 cups pecans
  • 1/2 cup Organic Raw Virgin Coconut Oil
  • 3 tbsps water
  • 1/2 cup Hazelnuts
  • 1/2 cup Chocolate Chunks 70% Cacao
  • mashed banana(s)
  • 2 cups organic spelt flour or all-purpose gluten-free flour
  • 1 tbsp chia seeds


  1. Combine flour, sugar, baking powder and vanilla extract in a bowl and mix.
  2. In a separate bowl, combine 1 cup of pecans, coconut oil, chia seeds and water until smooth.
  3. Combine dry and wet ingredients and add remaining chopped pecans, chopped hazelnuts, chocolate chips and banana until it holds together.
  4. On a baking pan, form 30 cookies (about 1 very full table spoon each), make sure to space them, as they will expand.
  5. Bake in the middle of the oven at 325F for 15-20 minutes. Let cookies cool down for at least 30 min before taking them off the baking pan. Enjoy!
