Originally, cacao comes from Central America as it was consumed by the Aztecs in the form of hot chocolate.
Our cacao butter comes from Bali and is produced in small batches of 5kg at a time. The beans are ground by hand before being moved to a dryer (38 ° C) and then pressed to extract the oil.
Melt cacao butter in a double boiler and mix it with raw cacao powder, vanilla and sugar to taste, until it becomes a creamy cacao. Cool in pan et voila, you'll have a bar of raw cacao! Add your choice of nut pieces or dried fruits for something a little different! Cacao butter is also used in the production of certain cosmetics such as sun oil or lip balm.
Cacao butter, thanks to its rich antioxidants, has a lifespan of 4 years in a cool and dry cupboard. Cacao butter is solid up to 35 ° C.

The saturated fat in raw cacao does not elevate cholesterol, unlike commercial chocolates, meat or dairy foods, since cacao butter contains plant sterols such as sitosterol, which inhibit cholesterol absorption.
