Sugar cane is in our diets since the prehistoric times, and originated from New Guinea or Indochina. Its harvesting was progressively introduced in nearby islands, then to India & China & finally in Europe and the New World.
Refined sugar, also known as white sugar, was used in medicine to treat ailments. Only the pharmacy was authorized to sell this product and only in small doses. Napoleon introduced sugar into our households and this ingredient then became part of our cooking and baking.
In the 17th century, sugar was still considered a rare amenity and therefore would be locked in the sugar bowl placed on our tables. The head of the family would be responsible for this key and would give small pieces to every family member.
This sugar is meant as a replacement for your regular white sugar. Sugar is very versatile in the kitchen and can be used in place of brown sugar (molasses sugar) in your muffins, cakes, pastries, sauces, jams and so much more.
BEWARE OF IMITATION! Certain retailers sell “brown sugar” which is in reality white confectioner sugar that has been colored with molasses or dyes to imitate cane sugar. Why not used unrefined sugar instead!
