Nut Butter Energy Bars

How It's Made

  • 2 apple(s) 
  • 3 tbsps Organic Golden Flax Seeds (1 kg)
  • 3 tbsps vanilla essence
  • 2 tbsps wheat-free tamari sauce 
  • 1 ¼ cup nut butter 
  • 2 ½ cups rolled instant oats 
  • 1 cup Organic Pitted Deglett Dates (1 kg)
  • 1 cup Organic Shredded Coconut, Fine (1 kg) 
  • ¾ cup Organic Pumpkin Seeds (1 kg)
  • ¾ cup nut selection 
  • ½ cup Organic Chocolate Chunks, 70% Cacao (1 kg)
  • 2 cups fresh fruit, diced 1 tbsp cinnamon, ginger or nutmeg

SUBSTITUTES: Substitute the soaked flax seeds for 2 tbsps of chia seeds soaked in 6 tbsps of water for 25 minutes. - Substitute diced fresh fruit for 1 cup of dried fruits such as cranberries and goldenberries to add some flavour and colour.

PRESERVATION: Will preserve for only a few days in the fridge but the granola bars can easily be stored in the freezer!


  1. Soak flax seeds in 6 tbsps of distilled water for about 20 minutes. Add 3 fruits, soaked flax seeds, vanilla, tamari and nut butter to your food processor until the texture comes out smooth.
  2. Pour the nut butter mix into a large bowl and add oats, dates, coconut, pumpkin seeds, nuts, chocolate chips and 2 diced fresh fruits of your choice. Season with cinnamon, nutmeg or fresh ginger and mix until combined. 
  3. Pour the granola bar mix in a glass lasagna like container and compact mixture until the surface is flat and uniform. 
  4. Put in the oven at 350˚C for approximately 30 minutes or until edges turn golden. Remove cooked granola bars from the oven and let sit until they are at room temperature. Cut into slices and serve. Enjoy!
