Moroccan Sweet Potato and Medjool Date Salad with Cilantro-Lime Dressing

All the middle eastern flavours you love in one bowl! This warm salad recipe combines nutritious and filling sweet potatoes with Medjool dates, carrots and red onions. How It's Made


  • 3 medium sweet potatoes
  • 2 medium carrots
  • 2 branches of fresh mint
  • 2 braches of flat parsley
  • 1 cup of cherry tomatoes
  • 1/2 red onion
  • 2 tabespoons of olive oil
  • 1 cup of cooked chickpeas
  • 1 teaspoon of
  • 1/4 cup of halved almonds
  • 4 pitted
  • Sea salt and fresh ground pepper.


  1. Place sweet potatoes in a large saucepan and cover with cold water, bring to boil and cook for 20 minutes over medium heat until they are tender. Drain and let cool. Meanwhile, place the chickpeas on a baking sheet, coat with olive oil and cumin, salt and pepper generously and brown at 400°F for 15 minutes.
  2. Peel and cut the carrots into small pieces. Chop the parsley and mint. Cut the cherry tomatoes in half, thinly slice the red onion and cut the Medjool dates into thin slices.
  3. Once the potatoes have cooled, delicately remove the skin and cut into cubes. Mix all ingredients of the salad together, salt and pepper generously. Drizzle with Cilantro-Lime dressing.

How It's Made: Cilantro-Lime Dressing


  • Zest of 1 lime
  • 6 to 7 branches of cilantro
  • 1/2 cup of olive oil
  • 1 teaspoon of Dijon mustard
  • Sea salt and fresh ground pepper
  • 1 pinch of powdered chili


  1. Mix all ingredients together until smooth. Adjust seasoning to taste.
