Marinated tofu and grilled veggie skewers

Looking for a dish to grill tonight? Just because you're vegan doesn't mean you can't contribute the most delicious dish the next time you're invited to a friend's BBQ. You don't need to be a carnivore to crave the smell and taste of perfectly grilled food. Almost everything is better on the grill... veggies, tofu, even pizza! Even if you've been eating it all winter, you'll want to try this amazing tofu, marinated to soak up a savoury sauce and grilled to perfection. The trick to getting this dish to soak up the flavours in the marinade is to choose a firm or extra-firm tofu and to try and press as much water as possible out of it before marinating. If you have time, prepare it the evening before a BBQ and leave to marinate overnight to get the maximum flavour. All you need to do the next day is add the vegetables of your choice (peppers, zucchini, cherry tomatoes and onion are all great) and grill away!

How It's Made: Tofu Marinade

Ingredients

  • 1 block of firm or extra-firm tofu
  • ¼ cup of soy sauce
  • ¼ cup of vegetable broth
  • 2 tablespoon of
  • 1/2 teaspoon of liquid smoke
  • 1 tablespoon of lemon juice
  • 1 tablespoon of tomato paste
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced

Directions

  1. Cut the tofu into cubes. 
  2. In a large bowl, mix all the ingredients for the marinade. 
  3. Place the tofu cubes in the marinade and leave for at least 1 hour, up to overnight. 

How It's Made: Grilled Veggies

Ingredients

  • 1 red onion
  • 2 zucchini
  • 1 dozen cherry tomatoes
  • 1 yellow pepper

Directions

  1. Cut the red onion in large chunks, the zucchini into rounds, and the yellow pepper into large pieces. 
  2. Prepare the skewers, alternating chunks of marinated tofu with vegetables. 
  3. Put the skewers on the BBQ, or place them on a baking sheet covered with parchment paper, and bake in an oven preheated to 400°F. 
  4. Cook for 10 minutes on each side, basting with leftover marinade as needed.
