Mango Lime Pie

Similar to key-lime pie, this mango-lime pie has a sweet touch of almond without cutting the delicious tang of lime.

How It's Made

Ingredients

  • 1 1/2 cup Mangoes
  • 1 3/4 cup water
  • 1/2 cup lime juice
  • 1 cup almond powder
  • 1 tablespoon Cane Sugar

 

PIE CRUST:

  • 1 1/2 cups flour of your choice
  • 1 tablespoon Cane Sugar
  • 1/2 teaspoon Salt
  • 1/2 cup coconut oil
  • 4 to 7 tablespoons water
  • 2 tablespoons blanched almond butter

Directions

  1. Preheat the oven to 375°F.
  2. Cut the mangoes in small pieces using scissors.
  3. In a bowl, cover the mangoes with 3/4 cups of water and 1/2 cup of lime juice. Set aside.
  4. Whisk together flour, salt and sugar in a large bowl.
  5. Add room temperature coconut oil, pressing it into the mixture and breaking it up, until it becomes coarse sand-like texture.
  6. Add cold water in gradually using a fork until dough comes together into a ball. Wrap in plastic and set aside.
  7. After at least 45 minutes, drain the mangoes and mix them in a food processor until smooth.
  8. Add the almond powder, cane sugar, and gradually 1 cup of water.
  9. Blend until smooth.
  10. With a rolling pin, roll the dough on wax paper until half a centimeter thick.
  11. Carefully place dough in a 9" pie mold.
  12. Pour in the mango mixture and spread evenly.
  13. Bake for 20-25 minutes.
  14. Serve hot or cold!
