Macho Nachos

How It's Made: Nachos


  • 1 bag of tortilla chips
  • Tex-mex spiced ground round
  • Grated dairy-free cheese
  • Tex-mex spices
  • Sliced black olives
  • Sliced jalapeños
  • Diced tomatoes


  1. Preheat the oven to 350°F.
  2. Evenly spread the tortilla chips across a baking sheet.
  3. Layer the remaining ingredients in the order that they are listed in.
  4. Bake for 10 minutes, until the "cheese" has melted.
  5. Optional: broil for 2 minutes (this will give the nachos a nice golden crisp).
  6. Serve with the Macho Nacho "cheese" dip, Macho Nacho "Sour Cream", salsa, chopped avocados and the Tex-Mex style black beans.

How It's Made: "Cheese" Dip


  • 1 cup cashews
  • 6 to 8 teaspoons of water
  • 1/2 red bell pepper
  • 1 teaspoon of onion powder
  • 1/4 teaspoon curcurma
  • 1 to 2 tablespoons of nutritional yeast
  • salt to taste


  1. Soak the cashews in water for 2 to 4 hours, this is what gives the cashews a creamy texture.
  2. Drain the cashews and blend them together with the remaining ingredients.

How It's Made: Sour Cream


  • 1 cup of cashews
  • 1/2 to 3/4 cups of almond milk
  • Juice of half a lemon(s)
  • 1 teaspoon of apple cider vinegar
  • 1 pinch of salt


  1. Soak the cashews for 2 to 4 hours.
  2. In a blender, mix all ingredients together, starting with the minimum requirement of ingredients then season to taste.
