How It's Made

Ingredients

  • spinach
  • Pineapple Rings
  • 1 avocado(s)
  • ¼ cup red onion(s), diced
  • ⅓ cup Sunflower Seeds
  • ⅓ cup Hemp Seeds
  • 2 tbsps freshly squeezed orange juice
  • 1 tsp lemon juice
  • 1 tsp agave syrup
  • 1 tsp dijon mustard
  • 3 tbsps olive oil
  • 1 tbsp white balsamic vinegar
  • sea salt and pepper to taste

Directions

  • In a small bowl soak the dried pineapple rings for 5 to 10 mins in water, until they are soft.
  • Once pineapple is rehydrated roughly chop them into bite size pieces.
  • Thinly slice the red onion. Slice open the avocado, remove pit (see link to see how to do this) and cut into slivers
  • In a bowl combine spinach, red onion, avocado and pineapples.
  • Sprinkle the sunflower and hemp seeds on top of the salad
  • Make the dressing in a Mason jar by mixing together the orange juice, lemon juice, agave, mustard, olive oil, balsamic vinegar & seasonnings. Gently pour the dressing over the salad, avoid too much mixing to keep the avocado from getting mushy.
