How It's Made
¼ cup red onion(s), diced
⅓ cup Sunflower Seeds
⅓ cup Hemp Seeds
2 tbsps freshly squeezed orange juice
1 tsp lemon juice
1 tsp agave syrup
1 tsp dijon mustard
3 tbsps olive oil
1 tbsp white balsamic vinegar
sea salt and pepper to taste
In a small bowl soak the dried pineapple rings for 5 to 10 mins in water, until they are soft.
Once pineapple is rehydrated roughly chop them into bite size pieces.
Thinly slice the red onion. Slice open the avocado, remove pit (see link to see how to do this) and cut into slivers
In a bowl combine spinach, red onion, avocado and pineapples.
Sprinkle the sunflower and hemp seeds on top of the salad
Make the dressing in a Mason jar by mixing together the orange juice, lemon juice, agave, mustard, olive oil, balsamic vinegar & seasonnings. Gently pour the dressing over the salad, avoid too much mixing to keep the avocado from getting mushy.
